Vegetables & Negative Calories: A Dietary Winner

by Carrie Hartson

Vegetarian meal plans can definitely help a diet as these dishes are inherently often going to be lower in calories than meals that have meat, and also much lower in fat. In fact, many vegetables have been labeled as “negative calorie” because of the benefit they have shown in helping dieters to drop unwanted pounds.

The most extreme form of vegetarian eating is from Vegans, who also don’t believe in eating any type of animal product. This includes dairy, eggs, and fish. There are many types of vegetarians who aren’t quite vegans, but have additional dietary restrictions compared to other vegetarians. This type of diet will still include many foods that go above and beyond the negative calorie food diet.

To ensure proper nutrition dietitians have created the vegetarian food pyramid, suggesting which foods in which quantities provide the best possible diet for most vegetarians. People with questions or concerns are encouraged to speak to their doctor or dietitian.

Much of vegetarianism involves substitution of things like milk, eggs, or butter. Soy or rice milk is a good substitute for dairy. For butter in things like sauteing, use broth or olive oil. There are egg substitutes composed of mainly potato starch or eggs can also be replaced by tofu blended with flax seed oil and water.

Vitamin B-12 which is vital in producing red blood cells is also lacking in most vegetarian foods. Eating soy or cereal products fortified with B-12 or taking supplements is important. Protein can be readily found in soy and tofu, legumes and lentils as well as nuts and seeds. For iron turn to the dark, leafy green vegetables. Consuming fruits rich in vitamin-C can increase iron absorption from plant based sources.

To make the switch to a vegetarian diet begin with the meals that are meatless, such as spaghetti, and incorporate meals that can easily be made vegetarian, such as stir fry using tofu instead of beef or chicken. Eat a wide variety of fruits and veggies to keep your palate happy and increase your level of exercise once your body has had a chance to adjust to eating vegetarian to lose weight.
